Hi friends, i wish to start this with some sweets. we all like ice-cream but if it is pure delicious home made one? wow!!!


Ingredients for 1 kg ice-cream:
(1) milk - 500 gm
(2) cream - 300 gm
(3) milk powder - 80 gm
(4) sugar -125 gm
(5) gelatin or sodium aliginate -2 gm
(6) vanila essence -1 teaspoon
(7) colour optional
we can use white yolk of the one or two egg instead of the 5th ingredient and its mainly act as a gelling agent for thickening and stabilizing the ice-cream and to ensure a creamy texture and prevent ice crystals from forming.
If cream is not available, keep the milk in refrigerator overnight then collect the cream from top with a spoon. you can collect 300 gm of cream from 5-6 liter milk.
HOW TO PREPARE
Add the milk powder in to the pre boiled luke warm milk and stir well then add cream and sugar and stir well.
Add thickening[Gelatin or Sodium Alginate] agent by dissolving in luke warm water or
if you use white yolk of the egg, beat it in a bowl with a fork then add into above mixture.
Heat this mixture to 80 degree [do not allow to boil] by constant stirring then remove from the fire and add essence and colour [optional] and keep stirring until cooled. Pour it in trays[preferably in aluminum trays]only up to 2 cm. Put the trays in the freezing compartments [set to the coldest temperature] for 2-3 hour. Remove the trays and beat with an electric beater or a mixer till smooth. Transfer the ice cream in to small cups or dishes and cover and freeze until the ice-cream becomes firm and of right consistency.
Now you can serve the pure, delicious home fresh ice-cream P-R-O-U-D-L-Y.
